Auxey Duresses "Vieilles Vignes"

 

Variety: Pinot noir.
  Average production: 6000 bottles per year.
  Soil: clay and limestone.
  Average age of the vines: 100 years

Viticulture: :
  Sustainable agriculture.
  Soil tillage.
  Green harvest.
  Harvested by hand.
  Selective sorting of grapes.

 

 

Vinification:
  100% de-stemmed.
  Fermentation on the skins for 12 to 15 days.
  Temperature controlled.
  Daily pump-over and punch-down.
  Pneumatically pressed.
  Aged in oak (20% new).
  Bottled after 12 months.

Tasting:
  Beautiful ruby color, like raspberries.
  A seductive nose with good intensity emphasizing notes of oak, ripe fruit and a slight animal character.
  The palate is well-supported by it’s weight, roundness and delicate tannins.

Aging and serving recommendations:
  This wine can be served a bit cool but not at room temperature. Uncork it an hour before serving
  to let the aromas open up.

Pairing:
  It will be perfect with all grilled red meats, roasts or cooked in sauce, or with small game such as quail,
  pheasant or partridge.
